FIELD: food industry.

SUBSTANCE: invention relates to food industry, beekeeping, namely to methods for determining botanic origin of honey to confirm its naturalness. Method for determining the botanical origin of honey involves examining the structural characteristics of pollen grains under a microscope with the increase in amount of 400 taken from the sample of fresh centrifugal honey of not less than 200 ml. Method includes counting quantitative presence of each morphological type of pollen grains at increase of 100, counting the sum of arithmetic mean values of total count of pollen grains of each identified type by formula ∑(1 + 2 +…i) and calculating frequency of occurrence by formula K = i/∑(1 + 2 + …i), where i are detected types of pollen grains. Botanical origin of honey is determined proceeding from percentage presence of pollen grains. Morphological features of the pollen grains are examined in one natural drop of honey from a sample not subjected to centrifugation and thermal treatment.

EFFECT: method is objective, easy to implement and reproduce, enables to determine true content of pollen grains and simultaneously considerably reduces labour intensity of research and material costs.
