FIELD: biotechnology; food industry; medicine.
SUBSTANCE: invention relates to biotechnology, food industry and medicine and can be used in production of biologically active additives and food products. Method of producing selenium nanoparticles in a colloidal form involves preparing a nutrient medium based on clarified curd whey with growth components, sodium selenite in amount of 1–2 mg/ml, introduction of activated cultures of bifidobacteria Bifidobacterium adolescentis DSM 20083 or propionic acid bacteria Propionibacterium freudenreichii Sh85. Then biomass is increased, probiotic microbial cell disintegration, cooling and bottling.
EFFECT: biological synthesis of nano-sized selenium particles by culturing probiotic microorganisms at high concentrations of selenium in a nutrient medium enables to obtain Se0 in zero-valent form, which improves quality and digestibility.
