FIELD: food industry; confectionary industry.
SUBSTANCE: invention relates to boiled caramel masses and products produced with the help of boiled caramel masses, and methods for caramel mass production and application of the boiled caramel mass as a coating. Disclosed is a composition of a food product unit coated with a boiled caramel, containing 40 to 95 wt% of a food item and 5 to 60 wt% of a sweet caramel coating on at least a portion of the food product unit, wherein the caramelized coating is characterized by a degree of crystallinity sucrose is more than 40 %. Disclosed are a method of producing a coating of a salted candy for a food product unit and a coating of a fried candy produced by said method, wherein the mass is undiluted, and water is also present during pulping. Disclosed is a combination of a unit of a food product and said coating of boiled candies, where the undiluted boiled caramel mass is present as a coating layer on the surface of the food product unit. Also disclosed is a food product unit composition coated with a boiled caramel comprising a salted caramel coating obtained by said method, in amount of 5 to 60 wt% and a unit of the food product in amount of 40 to 95 wt%, where the coating of the boiled caramel is applied on at least a portion of the food product unit.
EFFECT: invention is aimed at production of boiled mass for coating of food products with high degree of crystallinity of sucrose, which provides high moisture content of caramel mass, from which coating is made.
