SUBSTANCE: invention relates to dairy industry. Cream cheese with cedar concentrate is produced by acidic or thermo-acid coagulation of normalized mixture proteins consisting of normalized cream with fat weight fraction of 30–35 % and paste-like concentrate from cedar nuts kernel with fat weight fraction of 25–35 %, with following content of components in normalized mixture, wt. %: normalized cream with fat weight fraction of 30–35 % - 52–70; paste-like concentrate of cedar nuts kernel with fat weight fraction of 25–35 % - 30–48.
EFFECT: cheese has high biological value and good organoleptic indices.
