FIELD: food industry.

SUBSTANCE: invention relates to dairy industry. Method for production of dry high protein milk mixture for prevention of osteopenia in children and adolescents with celiac disease includes pasteurisation of milk raw materials, cooling, ultrafiltration, enzyme introduction β-galactosidase and hydrolysis of milk sugar for 3–4 hours at temperature of 40–42 °C. Pasteurisation at 90–92 °C for 8–10 minutes, measurement of protein content in hydrolysed ultrafiltration concentrate, composition of hydrolysed ultrafiltration concentrated defatted milk or reconstituted skimmed milk, with milk protein concentrate and/or whey protein concentrate, and/or whey protein microparticle. Mixing of the mixture until homogeneity and complete dissolution of the protein, introduction of vitamin-mineral premix D3 and Ca, probiotic and prebiotic, nucleotides and stirring the mixture to homogeneity and complete dissolution of the protein. Normalization of mixture by fat cream until fat content of 1.5–5 %, measurement of protein content in mixture, homogenisation at pressure of 12–17 MPa and temperature of 40–65 °C, pasteurisation at temperature of 70–75 °C with holding for 15 seconds while stirring. Subsequent thickening at 60–65 °C for 45–50 minutes to achieve 40–45 % of dry substances and drying on a spray dryer.

EFFECT: method allows to enhance nutritive and biological value of the product, as well as preserve the consistence and taste qualities of the product during its storage.
