FIELD: dairy industry.
SUBSTANCE: invention relates to dairy industry. Method of obtaining a cocktail provides for pasteurization of milk raw materials, cooling, measurement of the protein content in the raw material, composition of the mixture, with skimmed milk as raw milk, which after pasteurization and cooling before the composition is subjected to ultrafiltration or diafiltration, then make up a mixture of milk raw materials with milk protein concentrate, or sodium caseinate, or potassium caseinate, or a whey protein concentrate, or a microparticulate whey protein, vitamin D is added, the mixture is stirred, add filler and vitamin-mineral premix, direct to homogenization, submit to ultra-high-temperature treatment, cool and pack.
EFFECT: invention allows to increase the biological and nutritional value of the product, its dietary properties, keep the consistency and taste of the product without changing it during storage, improve the structural characteristics, reduce environmental pollution, expand the range of dairy products functional purpose.
