FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to food product processing method, which is located in insulating container or insulating shell or will be placed in them, by means of non-standard ohmic heating. Heating serves, in particular, for treatment of sausage products located in an intestinal casing, such as cooked sausage, sausages or similar food products. Corresponding food product is brought into contact with electroconductive electrodes located at a distance from each other, besides, the electrodes are connected to the controlled power supply source. According to the present invention, the electrodes are in the form of at least one first group of electrodes and one second group of electrodes, wherein the distance between groups of electrodes is equal to AEG. Each group of electrodes contains a set of separate electrodes, similar to a needle comb, and distance between adjacent separate electrodes of a needle comb is equal to AEE. Distance AEG is greater than or equal to distance AEE.
EFFECT: corresponding needle comb pierces insulating container or insulating shell of food product through, wherein process of piercing is performed so that points of inlet and outlet of needle comb on food product and container or shell are formed.
