FIELD: food industry.
SUBSTANCE: source of legume protein is extracted with water solution of calcium salt for solubilization of bean protein from protein source and for production of water solution of bean protein. One separates the water solution of the legume protein from the weight of the remaining protein source. Bean protein solution is separated to remove smaller residual solid substances not removed at initial separation stage. Smaller solid substances which are extracted at the second stage of impurity removal are washed. One performs drying the washed smaller solid substances extracted at the second separation stage to obtain a product of legume protein with protein content of at least 50 wt % (N x 6.25) d.c. There is a variant for production of legume protein product.
EFFECT: group of inventions enables to obtain a product with low content of phytic acid without reducing protein content.
