FIELD: food industry.
SUBSTANCE: invention relates to food products, in particular, to a group of confectionary products such as pastille products, particularly pastille and marshmallow. Disclosed is a pastille product made in form of marshmallow or pastille and is a sugar-like confectionery product of a foam-like structure obtained from the aerated mass with the addition of a structure-forming agent, wherein the initial components used are: drinking water, a saccharide substance, a fruit puree, an egg product, a jellying filler, flavouring substances and solid whole fragments of vegetables obtained from dehydrated or frozen raw materials, wherein the geometrical dimensions of the vegetable fragments are 5 % of the geometrical dimensions of the product, and the total content of the vegetable fragments in product is 3–12 % by weight. Solid whole fragments of vegetables are cut in a form close to parallelepiped in the form of cubes, rectangular strips of rectangular cross-section, cylindrical straw, in a form close to spherical, and solid whole fragments of vegetables are made of dried sublimated raw material, from dehydrated dried raw material, dehydrated with the help of shock-freezing.
EFFECT: claimed invention ensures enhancement of product nutritive value, as well as increase of shape stability, that is reliability of preserving the initial shape of the product, during transportation and under the influence of high temperatures.
