FIELD: food industry.
SUBSTANCE: invention relates to fish industry of food industry. Method for production of fish mince is characterized by that it involves preparation of fish raw material, its washing, inspection and grinding in mincer type K6-FVP-160 into particles with size of 2–5 mm, then obtained raw materials are directed to straining machine for finer grinding, then culinary food salt, spices, enriching component, wheat flour, chicken eggs, bulb onions, sunflower oil, curd and/or prunes are added into milled raw material, and/or red sweet pepper and/or spinach, and/or green onions, and/or spicy-aromatic raw materials, and after mixing form a mixture in the form of loaves, or blocks, or briquettes at following ratio of initial components, wt. %: fish raw material 73.1–77.0; spices 1.3–1.5; culinary food salt 1.2; bulb onions 1.2–1.5; chicken egg 4.0–5.0; curd - 0–2.5; concentration additive 0.01–1.2; vegetable oil 1.0; wheat flour - 10.5–12.0; dried plums 0–2.0; red sweet pepper - 0–2.5; spinach 0–4.5; green onions 0–3.0; spicy and aromatic raw materials 0–1.5, wherein fish raw material is carp and/or carling and/or cupola and/or river trout and/or hake and/or pollock, and as a dressing additive betulin-containing birch bark extract or amaranth flour are used.
EFFECT: invention allows to develop a highly effective method for production of fish mince possessing oncoprotective properties and increased food and biological value.
