FIELD: fishing industry.
SUBSTANCE: invention relates to the fishing industry and, in particular, to the production of molded sausages from aquatic biological resources, including freshwater fish. The method includes the acceptance of fish, its preparation, preparation of a prescription mixture, its processing in a mechanoacoustic homogenizer at a temperature of 70-80°C for 30 minutes. At the end of processing, a vegetable dye is added, mixed for 10 minutes, metal molds are filled, raw materials are compacted, baked in rotary ovens or ovens at a temperature of 150-200°C until a temperature of 60-70°C is reached in the thickness of the product. Drying is carried out in an oven at a temperature of 130-150°C for 10 minutes, cooled to a temperature in the thickness of the product not more than 8°C. Packed and stored. The mixture is used at the following content of components, wt.%: fish 70-75, paste-like concentrate from amaranth 20-25, aromatic spices 1.2-1.4, table salt 1.3-1.5, water - the rest.
EFFECT: invention provides an increase in the nutritional value of fish raw materials in the composition.
