FIELD: food industry.
SUBSTANCE: method of producing nanoemulsions of a beverage, comprising steps of: (a) providing a mixture containing oil, an emulsifier, water and optionally a preserving agent; and (b) mixing the mixture with a high shear mixer at rate of 20000 s-1 to 300000 s-1 to produce nanoemulsions, wherein during at least part of mixing period mixture has viscosity of 2800 cP at 10 s-1 to 50000 cP at 10 s-1; and wherein nanoemulsion has particle size d95 from 0.05 mcm to 1 mcm.
EFFECT: invention enables to obtain a beverage nanoemulsion having optimum viscosity, suitable for producing a nanoemulsion with a low fat phase content.
