FIELD: coffee industry.
SUBSTANCE: method for preparing whitener is carried out in the following way. Mineral substance is included in an oil component by high-displacement mixing to obtain the first composition. The first composition is mixed with an aqueous component to obtain the second composition. Alternately, mineral substance is included in the aqueous component to obtain the first composition. The first composition is mixed with the oil component to obtain the second composition. Further, the second composition is homogenized to obtain an emulsion of “oil-in-water” type. Mineral substance is selected from a group consisting of inorganic solid crystal substances that are insoluble in water and oil or inorganic salts with poor solubility in water, it has an average particle size from 0.1 to 100 mcm and is present in the second composition in weight percent content from 1 to 50% (by weight).
EFFECT: invention provides for the preparation of whitener with improved taste sensations.
