SUBSTANCE: invention relates to soluble chocolate powders for beverages preparation. Disclosed is a method for preparing a soluble agglomerated chocolate powder for preparing a chocolate beverage containing cocoa fat and chocolate powder solid ingredients, including at least a sweetener and/or powder of the white component containing protein, wherein the method includes steps of providing an aqueous emulsion of cocoa fat, loading into the agglomerator with spraying in the fluidised bed solid chocolate powder ingredients, spraying the cocoa fat emulsion into the agglomerator with spraying in the fluidized bed to form agglomerates, wherein powder of white component containing protein is selected from a group consisting of dry whole milk, dry semi-milk, dry defatted milk, whey protein isolates powder, powdered caseinates or powder rich in milk protein substitutes, such as wheat or soya beans, and mixtures thereof. Disclosed is use of an aqueous emulsion of cocoa fat for agglomeration by spraying in a fluidised layer of solid ingredients of chocolate powder when producing soluble agglomerated chocolate powder for chocolate beverage preparation. Also disclosed is a method for producing a soluble agglomerated chocolate powder for making a chocolate beverage, containing cocoa fat and solid ingredients of chocolate powder containing cocoa powder, comprising steps of preparing an aqueous emulsion of cocoa fat, cocoa powder is poured into the agglomerator with spraying in the fluidised layer; the emulsion of cocoa fat is sprayed into the agglomerated by spraying in a fluidised bed to form agglomerates. Aqueous emulsion of cocoa fat contains 3 to 50 wt % of cocoa fat.
EFFECT: invention is aimed at improvement of solubility of chocolate beverage powders during their dissolution with a cold diluent, while maintaining good flowability of said powders, required for stable dispensing of powder used in automatic dispenser for beverages, and for reduction of time for dissolution of powders of chocolate beverage and time for recovery of beverages.
