SUBSTANCE: invention can be used for improving the composition of nutritional, food and agricultural compositions. Disclosed is a composition used as a chemical agent providing thermal stability of nutritious, food and agricultural compositions, containing hydroxymethionine analogue of formula (I), approximately 15 % by weight of water or less, about 2700 ppm by weight of sulphate ions or less and having chromaticity on the scale of the American Association of Public Health (APHA) 200 or less, where k is 1 less than 85 % of compounds of formula (I):
where R1 is alkyl or substituted alkyl; k is integer from 1 to 1,000 and n is integer from 1 to 20.
EFFECT: disclosed composition has a low level of odorous substances of 10 ppm or less, improved color after heating composition to 140 °C for up to 12 hours and is suitable for use in food and fodder compositions.
