FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to production of individual portion of lunch dishes of capsules and natural ingredients. Method of preparation of individual portion of soup of capsules with broth concentrate and natural ingredients, in which the portion is intended for consumption by one person and which is carried out in a soup preparation system, includes containers with ingredients, measuring containers, a transporter for ingredients, capsules with broth concentrates and a capsular machine made with a needle for piercing the capsule to be pumped with water, and provides for the following stages: vessel for brewing soup per one portion is placed in receiving opening of system, made with possibility of automatic closing by shutter in presence of container in it; by signal includes conveyor and ingredients from measuring containers are supplied into vessel for brewing soup, installed in receiving hole; simultaneously water is heated to temperature of 90-100°C, capsule machine accommodates capsule with selected broth taste, capsule bottom is pierced with needle, and hot water flow is fed through needle hole into capsule, wherein the ready broth comes out of the capsule through the hole in the capsule cover and enters the bowl of the soup with ingredients contained therein; at the end of the broth intake into the plate, the ingredients are automatically mixed with the broth by means of the submerged mixer; thereafter, curtain is automatically opened to extract container with ready soup from intake hole.
EFFECT: technical result consists in providing a wide variety of soups range by using different types of broths and individual selection of ingredients directly in the individual tray.
