FIELD: food industry.
SUBSTANCE: invention relates to a heat-resistant milk protein product which can be used as a meat substitute. The product comprises ordinary cheese in a chopped form, a native casein concentrate, a protein-binding enzyme and a hydrocolloid. The protein content of the product ranges from about 10% to about 55%. The product is heat-resistant, does not melt when fried and/or burns in frying dishes when fried. The product has a fibrous microstructure containing casein proteins bound together.
EFFECT: invention can be used as a meat substitute.
