FIELD: biochemistry; food industry.

SUBSTANCE: starting material is provided in the form of a casein concentrate which contains whey protein in an amount of up to 0.5 wt% at most. Optionally, the casein concentrate material is concentrated. Material is heat-treated a temperature of up to 80-155°C. Heat-treated material is cooled. Cooled material is treated with a cross-linking enzyme. Optionally, the cooled material is treated with a coagulant. Material is processed into a casein protein-based product. Optionally, the product is isolated and / or packaged. Casein protein-based meat analogue has pH in the range of 5.5-6.7 and contains milk protein in an amount of about 9-50 wt%, 8.5-50 wt% of the milk protein is casein, lactose in an amount of 0 to 2 wt%, calcium in amount of about 2,500-12,500 mg / kg, phosphorus - about 1,600-8,000 mg / kg and biologically active peptides in amount of 20-700 mg / kg.
