FIELD: coffee industry.
SUBSTANCE: invention relates to the coffee industry. The method for producing an instant coffee product comprises the following stages. Instant coffee particles and edible oil are provided with an acceptable flavour. The oil is applied to instant coffee particles. Furthermore, the oil is transferred from roasted coffee beans to produce instant coffee particles containing aromatized oil during a soak period of between one day and one month. The quantity of flavored oil in instant coffee ranges from 0.8 to 4.5 wt. %. The flavour is transmitted in a medium which facilitates the transmission of the flavour in which both oil and roasted coffee grains are present. The medium facilitating the transfer of the flavour is formed so that the coffee grains and the oil cannot come into physical contact with each other.
EFFECT: invention enables producing a product with a high content of 2-methylpyrazine, consisting of at least 1.5 ng/ml of the vapour phase, and preserving this characteristic while storing the desired improved flavour of instant coffee for at least 3 to 24 months.
