FIELD: coffee industry.
SUBSTANCE: soluble coffee particles are obtained. One mixes the soluble coffee particles with fried whole grains of coffee, where the weight ratio of coffee grains to soluble coffee particles ranges from 4:1 to 1:4. Mixture is held in sealed container for two days to a month at holding temperature of mixture from 0 to 50 °C. Grain is separated from particles of soluble coffee. Instant coffee contains soluble coffee particles wherein equilibrium free space over instant coffee contains level of 2-methylpyrazine of at least 1.5 ng per ml of free space above the product. Amount of oil in instant coffee makes from 0.8 to 4.5 wt %.
EFFECT: group of inventions ensures production of a product with improved aroma and retention of aromatic substances with soluble coffee particles for three months produced by a simple method.
