FIELD: coffee industry.
SUBSTANCE: instant coffee composition for making a coffee drink contains soluble dry coffee substances and insoluble dry coffee substances, where insoluble dry coffee substances contain coffee oils and an insoluble fraction of a coffee precipitate, while the composition contains from at least 6 wt.% to 15 wt.% of the insoluble fraction of the coffee precipitate and at least 0.8 wt.% of coffee oils of the weight in a dry state, and, when analyzing after acidic hydrolysis, the insoluble fraction of the precipitate contains 1 wt.% of arabinose or less. A method for the production of such a composition is also described.
EFFECT: invention allows for the production of a soluble product with improved organoleptic characteristics.
