FIELD: chemistry.
SUBSTANCE: invention relates to a water dispersion containing citrus plant fibers. The water dispersion containing citrus plant fibers is characterized by a concentration at the closest packing (c*) of no more than 3.80 wt.%, wherein the water dispersion has an ionic strength of no less than 0.01 M. The method for preparing an aqueous dispersion includes the following stages: providing citrus plant fibers with c* of no more than 3.8 wt%; providing a water medium with ionic strength of no less than 0.01 M; and dispersing said fibers in said water medium. Proposed is a product containing a nutrient and the described water dispersion, wherein the product is a food product or feed.
EFFECT: invention allows obtaining water dispersion with controlled structure-forming properties and preparing products on the basis thereof with optimal stability.
