SUBSTANCE: group of inventions relates to citrus fibers and food compositions containing citrus fibers. Citrus fibers are taken in dry form with dynamic modulus of elasticity (G') of at least 50 Pa. Said G' is measured in an aqueous medium containing 2 wt %: citrus fibers dispersed in it at mixing with low shear forces with speed less than 10000 rpm.
EFFECT: use of group of inventions improves quality of finished product.
