SUBSTANCE: invention relates to biotechnology and concerns a method for producing xanthan gum. The method for producing xanthan gum involves the cultivation of Xanthomonas bacteria in a nutrient medium containing sources of carbon, nitrogen, and mineral salts, with separation of xanthan gum after the fermentation. Cultivation is carried out in two stages, at the first stage, the seed material is grown, and water with a reduced content of deuterium is used to prepare the nutrient medium. In the second stage, fermentation is carried out to obtain a culture liquid containing xanthan gum. The separation of xanthan gum from the culture liquid can be carried out by two-stage filtration. First, by filtration on hollow fibers with the separation of a precipitate with a molecular weight greater than or equal to 300 kDa. Then by ultrafiltration of the filtrate obtained in the previous stage, with the concentration of xanthan gum on hollow fibers with a cut-off limit less than or equal to 100 kDa.
EFFECT: invention makes it possible to increase the productivity of the method, the concentration of the product in the collected medium, the resulting xanthan gum has improved physical and chemical qualities and a certain range in molecular weight.
