SUBSTANCE: method of producing highly acylated gellan gum involves adding a seed culture of Sphingomonas elodea to a nutrient medium containing, g/l: tryptone 5.0, glucose 1.0, mineral salts 3.0, distilled water up to 1 l, maintaining culture conditions for 28–35 hours, performing fermentation of Sphingomonas elodea in fermentation broth at temperature of 25 to 35 °C, wherein the pH of the gellan fermentation broth is maintained below 6.5 throughout the process of producing gellan and is controlled by adding a suitable acid such as sulfuric, hydrochloric, phosphoric acid or citric acid, pasteurisation is performed at temperature from 80 °C to 110 °C for less than 5 minutes, fermentation broth is clarified by filtration, lyophilized at temperatures from -50 °C to -105 °C and milled, besides, before pasteurisation, glycoluril derivative in range of 0.01% to 0.5% is added to the culture liquid, gum solution is rest; the substance with the following structural formula is used: .
EFFECT: invention increases output of the finished product and improves its characteristics.
