SUBSTANCE: invention relates to biotechnology and microbiology. Hydrolysis of casein (1.8-4.0) is carried out by N hydrochloric acid at a hydromodule of 1:5 and at a temperature of (131±2)°С for 2 hours. A two-stage deionization is carried out on an anion exchange resin to remove chlorine ions. At the first stage, activated carbon at the rate of 30.0 g / l is added up to a pH of 1.9-2.0 and the mixture is heated to a temperature of (100±1)°С. The mixture is kept for 15 min and filtered to remove thymidine. The second stage of deionization is carried out at a pH of 3.5 to 4.5, activated carbon is added at the rate of 20.0 g / l and the mixture is heated to a temperature of (100±1)°С. The mixture is kept for 15 minutes and filtered to clarify the hydrolyzate. Sodium hydroxide is added up to a pH of 8.5-9.0 and the mixture is heated to a temperature of (100±1)°С. It is kept for 2-3 minutes until an insoluble precipitate falls out and is filtered to remove calcium, magnesium, manganese and iron. Sodium hydroxide is added up to a pH of 11.0-12.0, heated to (100±1)°С, kept for 2-3 minutes until an insoluble precipitate forms, and filtered to remove zinc. The purified hydrolyzate is neutralized with hydrochloric acid and dried.

EFFECT: invention ensures development of a method for producing casein hydrolyzate with certain properties that allow the production of a nutrient medium that meets the requirements of regulatory documents.
