FIELD: food industry.
SUBSTANCE: group of inventions relates to a shredding unit, a shredding machine with such a unit and a blade for them that can be used in the food industry. The shredding unit comprises a shredding grate with multiple holes located in it, located on the outlet of the collecting chamber, blades with independent speed control located above and next to the said shredding grate on the outside of the said shredding unit, and blades with independent speed control on the inside of the said shredding unit. Each of the said blades with independent speed control is controlled by a separate motor having an adjustable speed control separate from the motor that controls the said shredding unit. Each of the blades with independent speed control is adjusted to different speeds. The shredding machine comprises a shredding section containing a shredding head, a setting ring, a binding element, a drum and a collecting tube, a device located in the shredding head to advance the material, a shredding grate with multiple holes located in it located at the outlet of the collecting chamber, blades with independent speed control located above and next to the shredding grate on the outside of the shredding unit, and blades with independent speed control on the inside of the shredding unit. Each of the mentioned blades is controlled by a motor having speed control, regardless of the device located in the shredding head. The shredding grid contains multiple shredding holes that create a Venturi effect, and at least one collecting channel. The shredding machine assembly comprises a shredding grate and blades with independent speed control outside and inside said shredding grate, with the blades being controlled by a separate motor having speed control separate from the motor that controls the rest of said shredding machine assembly. The external flexible blade is attached in length to the blade support and is completely external to the said blade support. The blade is attached to the blade support by means of a fastener and uses the spring pressure from the blade itself to maintain the longitudinal edge of the blade in contact with the cut surface. In this case, the blade and the blade support are part of the rotating system.
EFFECT: shredding unit and shredding machine with the above blade ensure meat fiber orientation and stretching, which allows the fibers to pass through the holes at high speed and be cut to the required length.
