FIELD: food industry.
SUBSTANCE: invention relates to the food industry, in particular to the confectionery industry. The proposed chocolate is made from unrefined cocoa butter, coconut milk powder of 60% fat content, sunflower lecithin, plant extracts, hemp protein concentrate, trehalose, a filler selected from freeze-dried broccoli powder and freeze-dried lemon pieces or freeze-dried papaya powder and green pitahaya pieces, or, blue spirulina and puffed amaranth, or carob and bamboo charcoal. The components are taken in the following ratio in wt%: unrefined cocoa butter - 50.0-51.0; coconut milk powder of 60% fat content - 16.0-18.0; hemp protein concentrate - 18.0-20.0; trehalose - 8.0-10.0; sunflower lecithin - 0.1-0.2; plant extracts - 0.1-0.2; fillers - the rest.
EFFECT: invention is aimed at making chocolate that does not contain sugar in any form, animal source foods, including milk protein, lactose and casein, preserving agents, flavors, trans fats, aggressive sweeteners.
