SUBSTANCE: invention relates to the confectionery industry. The method of preparation of flour-based oriental sweets such as gata of a preventive effect involves the preparation of dough from butter, chicken eggs, yeast, salt, water, a mixture of wheat flour of the 1st grade, barley, soy and amaranth. Then the dough is fermented for about 40 minutes. A filling is also prepared from chopped dates and Jerusalem artichoke syrup. Next, the dough is rolled out. The filling is spread and the dough with the filling is wrapped in a roll. The roll is cut into pieces. An egg wash is brushed on the pieces. Then they are baked for 15-20 minutes at 180°C and after that they are cooled. The initial components are taken in a certain mass ratio.

EFFECT: invention makes it possible to make gata of increased nutritional value, to ensure the absence of added sugar, to proactively target products, to expand the range of flour oriental sweets.
