FIELD: beer.
SUBSTANCE: invention relates to the brewing manufacture. The method for fermentation and after-fermentation of beer wort includes executing the fermentation stage in a vertical bioreactor with a flat-shaped base and internal circulation of the wort flow from the bottom up, wherein the outer casing of the bioreactor has a jacket made along the entire height of the bioreactor, and the product subjected to at least partial fermentation in the bioreactor is supplied to the after-fermentation stage, wherein the product is sustained in warm conditions, removable sieves are placed inside the bioreactor, installed floor by floor, configured for wort flow to pass freely from the bottom up and simultaneously used as a support for the carrier with immobilised yeast cells laid over said sieves, wherein the thickness of the carrier installed on the lower floor is lower than that of the carrier on the top floor, and artik tufa from ash sediments is used as a carrier.
EFFECT: invention allows to accelerate the fermentation rate, to reduce the after-fermentation period, to increase the combined area of contact between the wort and the yeast, to increase the speed of passage of the wort from the bottom up at a small volume of the bioreactor, to use the applied yeast cell carrier multiple times.
