FIELD: food technology, microbiology.
SUBSTANCE: method involves culturing yeast biomass. Immobilization of cells is carried out by incorporation of yeast biomass into particles of gel-carrier taken among the following group: alginate gel, agar gel, carragheenan gel, polyvinyl alcohol cryogel followed by treatment of catalyst with 0.0001-0.001% solution of the autoregulatory factor d-1 at 10-40oC for 1-3 h. method provides preparing effective biocatalyst for producing alcohol-containing sparkling drinks of high quality.
EFFECT: improved preparing method.
