FIELD: biotechnology.

SUBSTANCE: to produce a protein hydrolysate for preparation of microbiological nutrient media, the method is executed as follows. Protein raw material is crushed, wherein legs of broiler chickens are used as raw material. The raw material is mixed with water and heated. The raw material is fermented with pancreas for 86 hours at a hydrogen ion concentration of 7.4 to 8.0 pH units, temperature of 45 to 50°C. The ratio between enzyme, raw material and water is 1:5:10. The resulting hydrolysate is purified by filtration.

EFFECT: invention allows to expand the range of non-edible and non-deficient protein raw materials for production of enzymatic hydrolysates while reducing the time of hydrolysis to 86 hours and maintaining the quality of the resulting product.
