SUBSTANCE: invention relates to food industry and pertains to a method for express detection of viable microorganisms in meat and meat products, including sampling thereof, preparation of a sub-sample and application thereof to a glass slide followed by staining and microscopy, wherein the sub-samples are homogenised by crushing in a sterile porcelain mortar or a sterile cup of a homogeniser, 1 g of the homogenised product is introduced into a sterile centrifuge tube with 0.9% saline solution, stirred with a stirrer, and then centrifuged, and a sample of the product is applied onto 3 glass slides, 2 samples each, whereto a fluorescent Live/Dead Backlight dye diluted with distilled water is added, the stained samples are covered with a cover glass and sustained in the dark, followed by microscopy thereof in a luminescent microscope with a blue light filter with magnification of no less than ×320, at least 25 fields of vision are viewed, photographed without flash in the high contrast mode, the image is transferred to a computer, only the amount of live/green and dead/orange-red microorganisms is counted in the fields of vision of all types of samples, and divided by the amount of fields of vision, resulting in the arithmetic mean value.
EFFECT: invention provides a reduction in the time of examination from 48-72 hours to 3-5 hours, use of laboratory glassware, nutrient media.
