FIELD: refrigeration technology.
SUBSTANCE: invention relates to refrigeration technology and can be used for liquid freezing of food products. The installation for liquid freezing of food contains a refrigerator connected to a freezing chamber filled with low-temperature freezing solution, which is designed to load food into it, a stirrer for mixing the solution in the chamber, which circulates the freezing solution inside the chamber volume with a set value of liquid flow, and a control panel capable of controlling the freezing process. The refrigerating machine is represented by a cascade machine with the lower and upper branches of the cascade connected by a heat exchanger. The heat exchanger is a condenser for the lower branch and an evaporator for the upper branch of the cascade. The evaporator of the lower branch is able to take away the heat released from the freezing solution when freezing food in the freezer. The multiplicity of solution circulation inside the freezer, defined as the ratio of the value of the liquid flow through the solution stirrer with which the freezer is filled to its volume, is maintained at a value of about 7.5 h-1.
EFFECT: invention makes it possible to increase the speed of freezing food.
