FIELD: food quality research and analysis.
SUBSTANCE: invention relates to the field of research and analysis of the quality of meat, fish or dairy products by measuring the parameters of the composition of the gas medium in the volume of their storage. The device includes a sensor cell, a measuring unit, and a microprocessor. The microprocessor is designed with the ability to calculate the value of the relative change in the current value of each gas sensor in the array, averaging the obtained values of the sensory response, determining the degree of spoilage of the product under study by comparing the averaged value of the sensory response with calibration measurements of the sensory response for various types of products, previously stored in the memory of the microprocessor, carried out at different temperatures.
EFFECT: use of the invention makes it possible to create an embedded or portable device providing the determination of the freshness and type of food by the volatile compounds emitted by it, as well as automating the processing and storage systems of various food products.
