FIELD: food industry.
SUBSTANCE: invention relates to devices for separating the liquid phase from vegetable raw materials and can be used to extract juice from berries and pulp of fruit and vegetable raw materials. The vacuum-mechanical press for squeezing juice from berries and pulp of fruit and vegetable raw materials consists of a housing with a lid, a perforated basket with a lid, a pressure plate, an O-ring, a spring enclosed in a telescopic casing with a rod for fixing, a pulsator and a distributor, vacuum and overpressure pipelines, taps, a branch pipe for juice removal, a juice collection container, inside which level sensors are installed, a pump for pumping juice. The press body and the perforated basket are made of non-oxidizable food materials. From above, the press body is hermetically closed with a lid. The pressing plate and the lid are connected by a spring enclosed in a telescopic casing. There is an annular groove in the pressing plate, into which an O-ring is installed, which provides a hermetic separation of the perforated basket and the chamber above the pressure plate. The modes of vacuuming and atmospheric pressure supply are changed using a pulsator and a collector.
EFFECT: use of the invention makes it possible to improve the quality of pressing vegetable raw materials.
