SUBSTANCE: invention relates to the food and meat industry. A method for producing a protein-lipid mixture from silk moth pupae for minced meat products, characterised by the fact that silk moth pupae are washed, crushed, fat is extracted, protein components are extracted in a 0.1 to 0.3% alkali solution, chitin and non-dissolved components are removed from the protein extract, protein is deposited at an isoelectric point and the protein paste is dried, the resulting protein preparation containing 60 to 75% protein is then mixed with the previously extracted fat at a ratio (5.5 to 0.5):(1.5:0.5) for 5 to 10 minutes.
EFFECT: invention provides a possibility of increasing the nutritional and biological value of a meat product by creating a new range of high-protein additives for meat products with a reduced content of cholesterol.
