FIELD: food industry.
SUBSTANCE: invention relates to food industry, specifically to production of dry ingredients of soft drinks, and can be used in production of instant granular beverages. Dry soft drink containing a sweetener, an extract from natural raw materials and concentrated natural viburnum juice is proposed. As a sweetener is used powdered sugar, as an extract from natural raw materials is used a dry extract of brown algae, for the preparation of which brown algae is crushed to a particle size of no more than 5 mm, extracted with water at 100°C and a hydromodule of 1:5 for 3 hours. The resulting extract is separated by filtration, dried to a residual moisture of 8% and crushed to a particle size of no more than 0.5 mm, with the following content of the initial components per 1 kg of the finished product: powdered sugar - 440-520 g; dry extract of brown algae - 250-280 g; concentrated natural juice of viburnum - 330-380 ml. Moreover, Saccharina japonica or Sargassum miyabei Yendo are used as brown algae.
EFFECT: invention provides an increase in drink biological activity by providing high organoleptic characteristics, namely, it allows to obtain a dry soft drink that has a completely natural composition and reduced sweetener content by more than 1.5 times, does not contain artificial additives, has high organoleptic characteristics, while the specific aftertaste inherent in brown algae is excluded, contains biologically active substances and has high stability during storage due to the content of concentrated natural viburnum juice.
