SUBSTANCE: invention relates to the food and fat-and-oil industry. The method for processing meal from high-protein oilseed raw materials includes the following stages: a) meal with a residual oil content of not more than 1% is mixed with water or an aqueous-alkaline or aqueous-salt solution having a pH of 6.5-10, at a mass ratio of water or water-alkaline or water-salt solution and meal from 4: 1 to 25: 1 to obtain a suspension, b) then the resulting suspension is kept in a container for 5-90 minutes at a temperature of 30-60°C, at the same time, during holding in the container, the suspension is stirred with a stirrer and the suspension is recirculated, leaving through a valve located in the bottom of the container, using a pump under pressure back into the container, c) then the suspension is separated into a protein extract and an insoluble residue, then the obtained protein the extract is sent for further processing, which consists in the fact that either moisture is removed from the protein extract to obtain a protein paste, or a solution is added to the protein extract to precipitate the protein and then the specified protein extract is separated into a protein paste and whey; the resulting whey is separated into residual protein, water and concentrated whey, then the resulting residual protein is added to the protein paste.

EFFECT: invention makes it possible to obtain a high degree of protein extraction from raw materials subjected to extraction within a short period of time, to reduce waste, to reduce the energy consumption of the technological process and to improve the functional properties of the protein.
