FIELD: food industry.
SUBSTANCE: disclosed is a method of processing sunflower raw material, during which preliminary enrichment of sunflower raw material is carried out, which includes washing the sunflower raw material with an alcohol solution containing 75-90 vol.% of isopropanol in treated water with bath modulus (BM) from 8 to 12, pH 4.5-6.5 and temperature 30-50 °C and further enrichment of pre-enriched solid phase with production of protein concentrate, or alkaline extraction of solid phase with addition of 0.2 wt.% hydrogen peroxide at pH 10.5-11.5 and temperature 55-60 °C to obtain a liquid extract, from which a protein isolate is obtained by acid precipitation at a pH value close to the isoelectric point of sunflower protein, followed by phase separation and neutralization. Protein concentrate or isolate is modified with sodium alginate in neutral aqueous solution.
EFFECT: invention makes it possible to increase efficiency of purification of sunflower protein raw material from polyphenol compounds, to obtain protein preparations having a neutral odour and taste and obtaining protein preparations with high functional and technological properties, which are not inferior to soya protein isolates or concentrates.
