FIELD: food industry.
SUBSTANCE: invention relates to a method of producing protein isolates. Protein isolate production method involves the first washing of sunflower protein flour at pH = 5–5.5, at temperature of 30–40°C for 20–40 minutes, separation of precipitate and filtrate, second washing at pH = 4–4.5, at temperature of 30–40°C for 30–40 minutes, separation of precipitate and filtrate, alkaline extraction at temperature of 55–60°C, pH = 10.5–11.5 for 50–60 minutes with addition of 0.2% hydrogen peroxide, separation of sediment and extract, acid precipitation of extract at temperature of 50–60°C, pH = 4–4.5 for 20–40 minutes to obtain a protein paste, separation of the obtained protein paste and precipitate, neutralization of the protein paste and drying in spray drying to obtain a protein isolate.
EFFECT: invention makes it possible to increase efficiency of protein raw material purification from polyphenol compounds for obtaining light protein isolates, which do not give subsequent green coloration at various modes of technological processing.
