FIELD: food industry.
SUBSTANCE: water-dispersible pigment composition comprises a dispersion of at least 2 wt.% of a carotenoid natural hydrophobic pigment in the form of solid particles with an average size of no more than 10 mcm. Said solid particles therein are dispersed in an aqueous phase containing a polysorbate as a water-soluble emulsifier. The polysorbate emulsifier : carotenoid pigment mass ratio is in the range from 1:10 to 4:1. The carotenoid natural hydrophobic pigment constitutes at least one pigment selected from the group consisting of bixin, β-carotene, α-carotene, apocarotenals, canthaxanthin, saffron, crocin, capsanthin, capsorubin, lutein, astaxanthin, rubixanthin, violaxanthin, rhodoranthin and lycopene in combination with (2) a water-dispersible composition containing a curcumin pigment.
EFFECT: invention provides a possibility of providing the required stability and intensity of colouring.
