FIELD: food and pharmaceutical industries. SUBSTANCE: a nonionic surfactant or a mixture of thereof is heated at 170-185 C for 30 to 90 minutes. To the surfactant thus prepared are added beta-carotene and an antioxidant, the resulting mixture is heated to 150-175 C, the hot solution is filtered and preservative antioxidant is added. The resulting solution thus formed may be used directly or the filtrate may be diluted with water or liquid vegetable oil to the desired concentration. The process makes it possible to obtain stable beta-carotene solutions. Claimed is a beta-carotene composition for vitaminizing and coloring food products comprising a non-ionic surfactant; oxyethylated pentaerythrite ether or a mixture thereof with tween -80 or a mixture thereof with tween-20; ascorbic acid or butyloxyanisole or butyloxy toluene; alphatocophenol acetate, etherified pentaerythrite, the ratio of the components being as follows (wt): 0.5-10.0 beta-carotene; 0.5-2.0 alpha-tokophenol; 0.05-2.00 ascorbic acid or butyloxy anisole or butyloxy toluene; 3.0-10.0 etherified pentaerythrite; and oxyethylated pentaerythrite ether or a mixture thereof with tween-80 or a mixture thereof with tween-20, the balance.
