FIELD: food industry.
SUBSTANCE: method for obtaining pectin from beet pulp is proposed, including its drying, grinding, extraction with a solution of citric acid, filtering and squeezing the extract, adding 95% ethanol solution to it, filtering the resulting mixture, followed by isolation and precipitation of pectin in a centrifuge, drying the precipitated pectin, extraction and delivering for recovery of used ethanol by distillation, and extraction waste for torrefaction. When extracting beet pulp, a 15% solution of citric acid is used in the ratio of beet pulp and acid solution 1:35, respectively, and to achieve a pH of the extract solution of 1.5, a 2% solution of oxalic acid (C2H2O4), and the pectin precipitated after extraction is dried at a temperature of 40-45°C.
EFFECT: production of pectin using reagents that are available and safe for humans and the environment.
