FIELD: food industry.
SUBSTANCE: invention relates to the food industry, in particular to the confectionery industry. The method for obtaining the filling for confectionery products involves boiling mashed black currant berries and cooling the resulting mixture. When boiling, glucose syrup is used in an amount of 16-20% of the filling weight, mixed with powdered inulin in an amount of 5-10% of the filling weight, the mixture is cooked over moderate heat for 26-30 minutes at a temperature of 75-80°C to a dry matter content of 82-84%. Then the prepared filling is cooled to 18-22°C.
EFFECT: invention provides an increase in the biological value of the resulting product and high organoleptic characteristics.
