FIELD: food industry.
SUBSTANCE: group of inventions relates to the food industry, in particular to a method for producing a packed food product. The method includes boiling of the food product at a boiling temperature of at least 100°C, introduction of the cooked food product to the atmosphere of superheated steam, drying of the food product to a parameter value aw in the range from 0.70 to 0.92, packaging of the food product into a packaging container in the atmosphere of superheated steam, and hermetic sealing of the packaging container.
EFFECT: use of the group of inventions will allow for an increase in the quality of the finished product.
