SUBSTANCE: invention relates to the food industry, namely to the development of recipe components for the preparation of liver sausage with increased nutritional value. Liver sausage with lamb offal contains minced beef of 2 grade, mutton offal, mutton fat, onion, table salt, matsis and a mixture of spices "Provencal herbs", and the mutton offal is not pre-cooked. The quantitative ratio of the initial components of liver sausage has been selected.
EFFECT: invention provides an increase in nutritional value, improvement of quality characteristics, including organoleptic properties, of the obtained halal product.
