FIELD: food industry.
SUBSTANCE: invention is intended for use in meat processing plants. The following is proposed: liver sausage made from chilled lean pork, chilled pork liver, chilled pork kidneys, table salt, granulated sugar, ground black pepper, fresh onions, fresh carrots, protein-fat emulsion, with the following ratio of initial components, wt.%: 40 of filled pork liver; 20 of chilled pork kidneys; 20.7 of chilled, trimmed, semi-fat pork; 15 of protein-fat emulsion; 2 of table salt; 0.13 of granulated sugar; 0.17 of ground black pepper; 1 of fresh onion; 1 of fresh carrots, wherein the protein-fat emulsion is made of 0.75 parts by mass of whole milk powder, 3 parts by mass of rendered pork fat, 0.75 parts by mass of flour from roasted milk thistle seeds and 10.5 parts by mass of water.
EFFECT: increasing the nutritional and biological value of the product, as well as expanding the range of liver sausages.
