FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to production of meat-containing chopped products of increased nutritive value. Meat-containing chopped products contain the following ratio of initial components: mince of reindeer meat, wt% – 40.0; pork mince – 20.7; chicken eggs – 1.0; pork fat – 5.0; bulb onions – 2.0; bread crumbs – 4.0; hydrated powder of girasol tubers – 8.0; culinary food salt – 1.0; black ground pepper – 0.3, drinking water – 18.0. Girasol powder is hydrated with water temperature of 18±2 °C at a ratio of food additive : water 1:2 for 30 minutes at temperature of 18±2 °C.
EFFECT: products have high organoleptic properties, high water-holding capacity, juiciness and softness.
