FIELD: food industry.

SUBSTANCE: group of inventions relates to food industry, namely to a method and a device for treatment of cooled meat with low-temperature gas plasma of atmospheric pressure. Device includes a container with a grid for a product, having a plasma removal and a plasma supply tubes. Latter is connected to a gas cylinder and a high-voltage discharger, where two pointed needle electrodes are placed. High voltage source and resonant transformer are also used. Method involves treatment in container for 10 to 30 minutes at a constant gas flow rate of 0.4–0.6 m/s. Ionization of used gas is carried out by discharges with frequency of 450–550 kHz at voltage between electrodes of 2–4 kV and generator power of 25–30 W.

EFFECT: longer shelf life of cooled meat is ensured by reducing microbial contamination.
